MOULES FARCIES

Ingrédients (pour 4 personnes) : 20 à 24 grosses moules

Pour la farce

  • 500 grammes de saucisse fraiche 1 œuf Pain trempé dans le lait 2 grains d’ail, persil, saler, poivrermoules_farcies
  • Ouvrir les moules à la main, introduire la farce dans chaque coquille attacher avec des élastiques culinaire
  • Faire revenir dans une cocotte avec de l’huile d’olive
  • Flamber

Pour la sauce

  • Faire revenir 1 gros oignon, 2 tomates bien mure pelées et épépinées, 2 cuillères à soupe de concentré de tomate
  • Ajouter 2 verres de vin blanc l’eau des moules filtré
  • Thym, laurier, poivre, ne pas saler
  • Piment d’Espelette.
  • Passer la sauce.
  • Ajouter les moules, laisser cuire 20 mn à feu doux

Avant de servir retirer les élastiques.
